I do not like the way ps files are treated in Mac OS X. When you open them, Preview convert them into PDFs. The result is BAD in most cases. This application is a wrapper produced with Platypus. You can drop ps files on it and it will open them with gv in X11. You should have installed gv via fink.
Xdvi • 1.0.0
Mac OS X does not have any native application able to handle dvi files. Since I am producing dvi files to preview things, I produced this wrapper with Platypus. You can drop dvi files on it and it will open xdvik in X11, not xdvi since somehow xdvi does not open on my Mac. However, I have only installed xdvi via fink. So you should have installed xdvi via fink.
XlatexDraw • 1.9.3
LaTeXDraw is a very handy tool written in Java for producing figures in LaTeX documents (see my diploma thesis for examples). You can use the same typeface to label things in the figure. This is a wrapper application produced with Jar Bundler of Apple. It wraps the version 1.9.3 of LaTeXDraw.

arXiv Widget • 1.1.2
This widget fetches the titles of the latest articles submitted. You can then click the "Abs"-button to read the abstract in the widget or go directly to the pdf or postscript version of the paper. (With "WWW"-button you can go to the page of arxiv for the paper)

You can enter your search string, press Enter and you're there! You can select from various output formats and sorting methods.

Vim-LaTeX: A LaTeX module for Vim. Very very handy.
BibDesk: Very useful and nice looking bibliography tool. It is very well integrated with LaTeX, BibTex, and Skim.
Skim: The best PDF previewer available. You can make notes, comments, etc. in the PDF files. In addition, if you produce PDF files for your talks, Skim can do transitions à Keynote.
